Beef, bacon "Cantina Style or Street Soft Tacos"
BEEF, BACON "CANTINA STYLE OR STREET, SOFT TACOS" - BACON OPTIONAL
I am sure wherever you live, there is a Mexican Food Restaurant where they serve tacos. Cantina style or street tacos are the kind that are served in a soft, warm corn tortilla, usually 4, with the beef chopped into small cubes, cooked and seasoned different ways. Here is my take on these simple, low calorie, delicious tacos you can prepare at home very quickly. The use of green and red bell peppers give the dish a colourful presentation as well as great taste. Also, you can omit the bacon if you want to cut back on fat calories. I don't always use bacon, only once in a blue moon.
INGREDIENTS:
1/2 Lb. beef, chopped into small cubes. You can use any meat you like, even ground beef if that is what you have handy
1 Medium onion, coarsely chopped
1 Small, sweet green pepper, finely chopped
1 Small, sweet red pepper, finely chopped
8 Slices of bacon, finely chopped - optional
Chopped cilantro/coriander to top tacos - optional
Salt and pepper to taste
2 Medium avocadoes, pitted and sliced lengthwise - scooped out with large spoon to retain slices to top your tacos
1 Bag of medium corn tortillas - warmed and wrapped in kitchen towel or inside a bread cozy to keep warm
Green chile or "Pico de Gallo" sauces. "Pico de Gallo" is chopped jalapeno peppers, tomatoes, onion, salt & pepper. If you make your own PdG, make sure you take the veins of 2/3 or all of your peppers so your sauce is not so hot or it is just flavourful and can be enjoyed by all the family. Use plastic gloves when working with peppers as your skin will feel the burn. Your hands will thank you.
HOW TO:
On a large non-stick skillet, over medium-high heat, cook the bacon making sure it does not stick together. Place the bacon on a plate. Pour out the fat into a small bowl and cool completely so you can dispose of it in the garbage, not the drain.
Next, brown the beef. Drain the excess fat. Add the peppers and onion, cook until onion is transparent. Add the bacon, salt and pepper to taste and cook for an additional 3 minutes or so, for the ingredients to infuse the beef with their flavours.
Serve beef in large bowl. Have your tortillas warmed. Chopped cilantro/coriander in small bowl to top your tacos. Place the avocado slices in medium serving bowl. Serve green chile sauce or "Pico de Gallo" in small bowl.
Serve with your favourite beverage and enjoy your genuine low cal/fat Mexican Cantina or Street tacos.
