Chili con carne

You can make your own chili, cut back on fat and make a very tasty meal. The contents of the chili, beside the ground beef or cubed beef can be red kidney beans, garbanzo beans, green peas, corn niblets, cubed potatoes. It is really up to your taste or your cravings. As for the red sauce, yes, you can buy that at your local grocer either in jars or in bags in the freezer section. I like this sauce because it is made with dried red peppers which are cooked and it has already been seasoned with onions and garlic, you don't have all the work of cooking, straining and seasoning it. A real time saver.

Home made Chili - My take on it.

Ingredients:

1 lb.ground beef - or stew beef or cubed steak

1 16 oz bag or jar of red chili sauce - mild or hot.

1-2 15 oz can of red kidney beans or garbanzo beans (chick peas) or both,, or frozen green peas or 3 medium peeled cubed potatoes. It is your choice. You can even use two different types of beans or vegetables.

4 tablespoons of tomato paste or ketchup, to add sweetness

Instructions: In a 4 quart sauce pan, brown your beef on medium heat. And keep the meat juice. Add the chili sauce, ketchup and your beans and vegetables. Bring to a boil and simmer for 5 minutes.

Serve with a nice salad, saltine crackers or fresh baked Pillsbury buttermilk roll or some Lays Fritos. Try it, I am sure you will like it.
