Easy Red Chili Sauce Enchilada Pie
Don't you just love those yummy, spicy red chili,cheese enchiladas? I do,I just don't particularly care for frying each tortilla in oil - however lightly - or get fillings on each one and put on the plate. By the time you are done, the first ones you made are already cold and that is just one plate.
I found a way to make enchiladas easily and fast with no mess and you might just save yourself lots of calories without compromising on taste. And you can buy the red chili salsa already made at your favourite grocer, it usually comes in mild or hot - I love the hot one .
Red Chili Sauce Enchillada Pie
Ingredients:
1 Lb. Small corn tortillas
1/2 to 1 Small white onion finely chopped or grated
1/2 Lb. of shredded cheese - I find Asadero cheese melts beautifully and has a really nice taste. Mozzarella is also a great cheese to use here. You can use other white cheeses but no cheddar please, it's flavour does not go well with the red chili sauce and it is not even used in Mexican cooking.
1 Small bag - 16 oz - of ready made red chili enchilada sauce, mild, medium or hot, it is up to your taste
1 Tablespoon of Olive oil
In a 10" non-stick skillet, place the olive oil.
Then arrange a layer of tortillas followed by chopped onions and shredded cheese and chili sauce. Repeat until you have run out of tortillas, onion and cheese. Pour some more of that sauce on top of your layers and top it up with some more cheese. Cover the pan and just heat up on low flame until it is warm enough to eat.
Prepare a salad on the side and presto! you have a delicious, low calorie mexican food meal. You can treat yourself to a nice cold beer to go with it. Buen provecho or bon appetit!
