Fajitas - Chicken or Beef

FAJITAS - CHICKEN OR BEEF

This is a great tasting dish and very easy to make.  You will like it and so will your family.  Let's make it Fajita Night tonight.

INGREDIENTS:

4      Halves, boneless, skinless chicken breasts, cut into strips OR petit sirloin cut into strips

5      Tablespoons of olive oil or the oil of your choice

2      Large onions, cut in rounds then cut in half

2      Large green bell peppers, seeded, cut in slices

1      Medium yellow bell pepper, seeded, cut in slices (this pepper is just for adding color to the dish, it is optional)

3      Large tomatoes cut in wedges

3      Garlic cloves, finely minced

        Salt and pepper to taste

3       Sprigs of coriander/cilantro, torn from the stems

1       Large bag of flour tortillas, plain or whole wheat, warmed

3       Large avocadoes, mashed

HOW TO :

In a large skillet, over medium high heat, cook the chicken in the oil until the chicken is no longer pink.  Add the onions, garlic, tomatoes and peppers.  Lower the heat and cook until the onions are transparent and the tomatoes have rendered their juice.  Salt and pepper to taste.  Add the coriander.   Cook an additional 3-4 minutes, turn heat off and cover.   Let it sit for 5 minutes or so before serving.   You will have tender flavorful chicken and veg with a thick sauce.   Warm your tortillas and place in a warmer.

Take your avocadoes, pit them, spoon out the pulp and place it in large bowl where you mash with a fork.  

To serve, take a flour tortilla, some avocado mash and the fajita mix, add a hot sauce like pico de gallo or jalapeno sauce.  Fold one end of the tortillla in (this will prevent juice drips while you are eating) and fold the ends of the tortilla inward and there you have it, delicious, easy, home made fajitas.  And none of the Ole! thing, that is from Spain, not Mexico.
