Home Made Fresh Tomato Pasta Sauce

 

HOME MADE FRESH TOMATO PASTA SAUCE

It has happened to me a few times and I am sure it has happened to you.   But don't worry, with ingredients you already have in your fridge and pantry, you can still have a nice pasta dinner even if you don't have your favourite, store bought, tomato pasta sauce.   

INGREDIENTS:

5      Large tomatoes, blanched with skins off.

1      Medium onion, finely chopped

5      Large cloves of garlic, finely chopped

1      Teaspoon of crushed oregano

2      Tablespoons of fresh finely chopped parsley or dry crushed parsley

1      Tablespoon of fresh finely chopped basil or dry crushed basil

1/4    Cup of olive oil - which ever type you have

4      Tablespoons of tomato paste or ketchup (Optional - if you want a thicker sauce)

3/4   Cup of water

1      Teaspoon of crushed red peppers - Optional

        Salt and pepper to taste

        Sweeten to taste with sugar or sugar substitute like Stevia or Splenda, to soften the tartness of the tomatoes.

INSTRUCTIONS:

In boiling water in medium sauce pan, blanch your tomatoes for 2 minutes, peel skins off and coarsely chop.

In large skillet, place the olive oil, your chopped onion, garlic, oregano, parsley, basil, crushed red peppers and over low heat, saute until the onions look transparent.   Add your tomatoes, saute for 3 to 4 minutes.   Optional: Add and dissolve tomato paste or ketchup,add water, season to taste.   Bring to a boil, lower heat and simmer for 15 to 20 minutes stirring occasionally until it reaches your preferred consistency in a sauce.     Mix with your cooked pasta and enjoy.

If you opt out of the tomato paste or ketchup, you can cool the sauce and place in blender to give you a smoother texture sauce.  Your family will be in awe of your cooking skills.
