My giant meat ball dinner!

My "Giant Meat Ball" Dinner.

Has this ever happened to you? You just got home from work and are about to make dinner when you realize the ground beef is frozen solid? No problem. This has happened to me - more often than I care to admit - but the solution is easy. So wait up, don't order out just yet because in about 45 to 60 minutes, more or less the time it takes the delivery person to arrive with your take out, you can have a delicious dinner I call "Giant Meat Ball" dinner.

All you need is a 12 inch skillet or 4 quart sauce pan, depending on the shape your ground beef is in, a flat shape or the one your butcher shaped it upon packaging.

Here is what you do:

Spray the bottom of your skillet or pan with olive or canola oil and place your frozen chunk o' beef in it.

Next, pour a jar of your favourite pasta sauce over the beef along with 2/3 cup of water. Cover it (must cover it, otherwise you'll wind up with tomato splattered on your stove top) and cook over low flame for approximately 45 to 60 minutes. It might be ready earlier than that, it all depends on the size of the beef chunk. You know it is done when you can easily slice the beef at it's center.

While your ground beef is cooking, slice a loaf of italian or french bread lengthwise, spread with butter, sprinkle with garlic powder - or for a more genuine taste, mix 2 to 3 tablespoons of butter or Smart Balance spread with a small, mashed & minced garlic clove and then spread it on the bread - and place in a 400 degree oven for 10 to 15 minutes or when the edges are a light golden colour. Slice.

Also while waiting, wash your romaine lettuce and tomatoes and whatever other toppings you usually have with salad.

Cook your favourite pasta and drain.

Serve the ground beef in slices over the pasta and top with the sauce. Your salad and garlic bread on the side. A glass of red wine for the grown ups and some iced tea or juice for the children and ... enjoy.
