Tuna Patties or Croquetes

If you like tuna, you will like this recipe.    It is not exactly the original one (that is a family secret my mom made up) but they will still taste great.

Ingredients:

You will need an egg per can of tuna so,

??    Cans of tuna, pour liquids out     On e can of tuna will yield about 6 or 7 patties depending on how large you spoon it on pan.

??    eggs

pepper to taste

chopped onions

chopped parsley (dry or fresh) to taste

In a big bowl, mix eggs, tuna and seasonings.   Let it rest for a few minutes so the moisture is absorbed by dry ingredients.

Use a non-stick pan but very lightly spray with olive oil to prevent patties from sticking to pan.

Drop tablespoonfulls of the tuna mix onto pan and cook until nice golden colour and turn.   This usually takes about 4 minutes so the egg is well cooked.   They turn out quite nice and you can serve them with a mayonnaise/cracked peppers sauce, a rice & vegetable side dish and a salad.  They are very light so plan on serving about 5 per person.
