Albacore tuna and avocado salad

Before getting married and in order to look great on my wedding day and fit into my gown, I used to lunch or dine on Albacore Tuna, in my opinon a wonderfully delicious tasting tuna.   I would use half a tin of tuna and half an avocado and combine them with a bit of pepper and serve on a small bed of romaine lettuce with about 6 Nabisco saltine crackers, or serve it as "tostadas" on two oven baked corn tortillas.   It proved a filling, tasty meal and to this day, I love this dish but,I have made a couple of additions/changes to please my family.   You see, I do not ingest salad dressings, never developed a taste for it.

2     5 Ounce tins of Albacore tuna in water - drained (Star Kist, Chicken of the Sea or even store brand)

2     Medium sized avocadoes, cubed

       Ground pepper - to taste

4     Tablespoons of Kraft Sun Dried Tomato Vinaigrette. OR SUBSTITUTE WITH THE FOLLOWING DRESSING:

2    Tablespoons of light olive oil, plus

1    Tablespoon of pure sesame seed oil, plus

1    Tablespoon of Kraft Yellow Mustard.

      Black or Green stuffed olives to taste

      Hot pepper flakes - Optional

MIX:  

Ground pepper, olive oil, sesame seed oil and mustard.

ADD:

The tuna and avocado.

Serve on a bed of torn romaine lettuce, topped with your choice of croutons and olives,with Nabisco saltine crackers on the side, OR

Serve on top of corn tortilla "tostadas".

Either very tasty, so you can serve this salad more frequently.   Tuna is very good for you.

SERVES: 3 to 4 portions.
