Chicken Caesar Salad

CHICKEN CAESAR SALAD

I always have roasted or boiled chicken breasts on hand in the fridge or freezer, to prepare fast and easy meals.   

This version is something you can make quickly when you have company and want to spend time with them and not cooking.  Or on those days when you just don't feel like cooking, or on a hot day, when the last thing you want to do is spend time in a hot kitchen.

INGREDIENTS:

2      Chicken breasts, cubed (about 1 inch cubes)

1      Medium sized romaine lettuce - or whatever type lettuce you like - torn into pieces by hand

1/2   Cup "Ken's, Creamy Caesar dressing"

1/4   Teaspoon cracked black pepper

1      Large avocado, cubed

1      Cup of black olives - Optional

1      Cup of croutons (store bought or home made as recipe in this web site)

HOW TO:

In glass bowl, place Ken's creamy caesar dressing, pepper.   Add the lettuce.   Toss.

Add the chicken, avocado and olives (optional).   Gently toss.

Chill for 1  hour before serving.

Place the croutons in a bowl so everyone can use them to taste.

YIELD:   4 Generous portions.
